As winter weather starts to make way for spring, we're thinking about the places we go to reset, to enjoy a change of scenery, or simply to stop and take a breath. With this in mind we've compiled a few of our favourite boutique hotels, farmsteads and homes whose owners have thought deeply about the details - be it great design, an excellent menu or a location that's second to none.
1. Ross Farm, Gippsland
It’s no secret that we love what Ross Farm do, in fact, we’ve photographed more than one campaign on location at this special place. Comprising three unique pavilions: The Barn, the Dairy and the Cabin, Ross Farm is equipped to host up to 12 guests across the property. The land that would become Ross Farm was purchased in 2000 by the Moore family, who, over the course of almost twenty years transformed the property into boutique accommodation while beautifully preserving elements of the agricultural architecture of the original dairy structures.

2. Unyoked
Our friends at Unyoked are the ultimate nature-company. With cabins in New South Wales, Queensland, Victoria, Tasmania and now New Zealand and the UK too, they're serving up nature-on-demand when we need it most. Built on the principals that time in the outdoors reduces stress, boosts creativity and allows for deep thought, Unyoked's smartly designed cabins are equipped with everything that you need (including IN BED linen) and nothing you don't.

3. The Cottage, Kangaroo Valley
Hidden in the heart of Kangaroo Valley is a circa 1880's cottage owned by Australian artist & stylist Lisa Madigan. Originally housing The Kangaroo Valley Times, the property has been brought back to life as an oasis of calm. Complete with industrial style kitchen, old brick fireplace and soft white linens – it's the perfect country retreat in the beautiful Southern Highlands.

4. The Eltham Hotel
The Eltham Hotel has a colourful history dating back to the late nineteenth century. It's long been a meeting place within the Byron Bay hinterland and in 2019 was lovingly restored by hotelier Julia Ashwood and her husband Matt Rabbidge. Each of the meticulously considered rooms pays homage to a different bohemian woman who has spent time in the building while staying loyal to its old fashioned charm.

5. The Eastern, Thredbo
The Eastern is made up of two individual residences, lovingly named Cedar & Oak, perched at opposite ends of Thredbo's picturesque village. Nestled among Australian Silvergums both properties are architecturally designed with interiors that take cues from the Japanese and Nordic Mountains. Understandably, The Eastern comes alive during the winter months with Thredo in full force, however, the Kosciuszko National Park in which it’s located is glorious all year round.

6. Daylesford Longhouse
The Daylesford Longhouse is a project between Architects Partners Hill, and homeowners Trace Streeter and Ronnen Goren. The property in Central Victoria houses a small farm, garden kitchen, cooking school, events venue and their home - most of which is contained in a long and singular, 110 metre shed. It's such a unique structure and ambitious project that it was the focus of an episode of Grand Designs Australia in 2018.

7. SABI, Tasmania

SABI is a beautifully handcrafted stone and timber cabin located in Tasmania’s stunning Bay of Fires and has long been on our list of places to spend a cosy weekend. Lovingly appointed, each design choice in the property champions the artisan, the unique and the luxurious.

8. Prairie, Byron Bay
A recently launched designer guest house in Byron Bay, Prairie, features an outdoor bath and a luxurious, king size bed as well as a light, open living area and plenty of outdoor entertaining space. Located close to Byron's industrial estate there's an array of great restaurants (including our favourite, Kouzina) on your doorstep and it's just a short bike ride to Byron's many beautiful beaches.
